Sue Mallick with Food City presents a wonderful recipe for tasty panko coated Zucchini Friesat Food City's Cooking School. This episode accents a free program featured every Monday night at The Crown Point Shopping Center location on North Eastman Road in Kingsport, TN. See www.foodcity.com for complete recipe details.Ingredients: 1 cup panko bread crumbs; 1/2 pkg. taco seasoning (about 1 tbsp.); 3 medium zucchini; 1/4 cup mayonnaise; 1/2 cup grated parmesan cheesePreparation directions: In a small bowl, mix Panko bread crumbs with taco seasoning; Remove ends from zucchini and cut the zucchini crosswise into 2 or 3 sections. For thin fries; cut each section into 1/4 inch thick lengthwise slices, then cut the slices into 1/2 inch long fries. For thick fries; cut each section into wedges.; Blot dry with paper towels if fries are weepy.; Brush fries with mayonnaise, then dip into bread crumb mixture. Sprinkle with Parmesan cheese and place on parchment lined cookie sheet.; Bake at 375 degrees. For thin fries; bake 10 to 12 minutes or until brown and crispy. For thick fries; bake 15 to 20 minutes, they will not be as crispy.
